JAMS AND MARMALADES

The eight fruit spreads by VIA PARINI: If there were only seven of them, there was no need to invent a further day to enjoy one of this delicacies for breakfast.

The recipe of our eight different, biological and vegan certified marmalades and jams is very simple: The fresh local fruits or the ripe berries are boiled down only with the finest cane sugar. No pectin, no gelling agent, no conservative and colouring, no citric acid and especially no fruit concentrate. We focus completely on the quality of the carefully selected basic products and their precise manufacturing by hand.

For every 100g of our marmalade, depending on the variety, between 95g and 120g of fruits are elaborated; that results in an extraordinarily high fruit content. The valuable raw materials, also the strawberries, blackberries, cherries, oranges, blood oranges, mandarins, white peaches, and the figs derive from biological and certified companies of all parts of Sicily.  

Concerning our biological and vegan certified marmalades and jams we focus on the quality of the precisely selected, fresh, and local fruits and the ripe berries from Sicily. Besides, we concentrate on their careful elaboration by hand.
The concentration on the fine raw materials and the waiver of food additives results in the outstanding high fruit content of our marmalades and jams.

STRAWBERRY JAM

Nonna Vita says:

„Of course, this strawberry jam has to join your breakfast table. But also with soft cheese, like for example a young Brie or a Gorgonzola, or as the filling of a Crêpe this jam is divine.“

The Production:

The classic product of our jams. Our Confettura di Fragola is characterized by the unique quality of the biological certified Nabila- Antilla-Strawberries from the Province of Marsala at the Sicilian west coast and by their careful finish in the little manufactory. With a fruit content of 110g of strawberries for every 100g of jam and without artificial additives, it is an extraordinary pleasure for the palate.

The Taste:

With its overwhelming high fruit content, this jam allows a completely new taste experience. The full, sweet taste of the ripe fruits expands in your palate and at the same time it exhales a soft breath of the perfume of roses.

MANDARIN MARMALADE

Nonna Vita says:

„It tastes great on the morning croissant with an espresso, but also with a lot of different cheeses. Sometimes I add a spoon of it into a sauce of poultry or deer. But also baked carrots are delicious with a spoon of mandarin marmalade.“

The Production:


Among connoisseurs the biological certified mandarins called Tardivo di Ciaculli and Avana from the Province of Marsala at the west coast of Sicily are known as the best mandarins of the world. With an impressive fruit content of 120g of mandarins in every 100g of marmalade and due to the careful treatment without food additives in a little manufactory in Sicily our Marmellata di Mandarini is a real pleasure.

The Taste:


While opening the glass, the strong, sweet, and fresh flavour of ripe mandarins emerges on the nose. On the tongue it develops an intense, long lasting taste of the fantastic sweet fruits.

JAM PEACH

Nonna Vita says:

„You can add this jam to yogurt and muesli or you can eat it on a freshly prepared omelette. Sometimes I add a spoon of it to the paste of muffins or tortes, to enrich them with these high-quality peaches.“

The Production:


For our aromatic Marmellata di Pesche we exclusively use ripe white organic peaches from the Sicilian Agrigento and biological cane sugar out of a fair-trade production. Like all our marmalades, it has an extremely high fruit content of 110%. That means, for 100g of jam, we use 110g of peaches, which are washed, cored, and peeled by hand.

The Taste:


The jam of white peaches shimmers like amber and tastes like we intended to conserve the perfume of summer in a glass. The low acidity of the white peaches in comparison to other types gives a subtle sweetness to the flavour.

BLOOD ORANGES  MARMALADE

„If you want to impress your guests during the next brunch, you have to put this marmalade on the table. Furthermore, it tastes with hearty dark bread, hard cheese, like for example a young Pecorino or a mild Gruyère, or a soft cheese, a Robiola for example … or you use the Marmellata di Arancia as a filling for an omelette.“

The Production:
In our Marmellata di Arancia Rossa there are only fully certified organic blood oranges of the Province of Catania. These peaches are processed by hand with organic cane sugar of a fair-trade production to a marmalade with a fruit content of 95% (95g of blood oranges for 100g of marmalade) and a pure taste of blood oranges.

The Taste:



The volcanic soil around the Mount Etna and the high temperature variations are the main reasons, why the Sicilian blood oranges are of good reputation in the whole wide world. The taste of this unique Tarocco is a festival for the palate. The fresh fruitiness, the discreet sweetness, the soft finish – a marmalade like in a dream.

JAM BLACKBERRY

„Blackberry jam is not only a must for the breakfast buffet, it also gives full effect to the creative kitchen. What do you think about it as a supplement to the sweet vanilla cake or as the finishing to the deer sauce? My absolute insider tip: Try the jam together with a fresh apple or boiled down together to a compote!“

The Production:

Like all our fruit spreads also our Marmellata di More is organic, without preserving agents, additives, and colourings. But it contains a delicious part of 120g of selected, local blackberries in every 100g of marmalade. The blackberries are reduced to a delicious jam in affective hand craft in a little manufactory in Sicily.

The Taste:

If you have not tried this marmalade yet, you will be absolutely impressed. The sparkling, tempting colour of this jam does not promise a lot. It is the opposite: The organic blackberries from Sicily enthuse you by their intensity, a light acerbity, and a powerful spice.

JAM CHERRY

„A slice of bread with some cherry jam as fruit spread and a glass of Nero D ‘Avola. Delizioso! Or just enjoy the jam with a piece of Pecorino, some white chocolate or two or three Amaretti di Saronna. In a yogurt or in a quark the taste of the cherries develops very well. Just try it!“

The Production:

What distinguishes our delicious Marmellata di Ciliegie from other cherry jams? It exclusively consists of ripe and organic Ferrovia-Cherries grown in the Province of Catania and of organic cane sugar from a fair-trade production. As we do not add pectin during the production, our jam thickens slower and we must use more fruits. With a fruit content of 105% (105g of fruits for 100g of marmalade) this jam contains more cherries than conventional fruit spreads.

The Taste:


The taste of this cherry jam is dominant, very juicy, and enormously complex. In other words: This jam is like a floral taste explosion on the tongue and in the palate.

ORANGE-MARMALADE

„It is not only a part of the breakfasts table, it is also a part of the good kitchen. The Marmellata di Arance tastes excellently with a piece of Parmesan, but also with softer cheese like Fontina or Asiago. Try the marmalade as a food spread in a cheese sandwich with bread with nuts. But also as a marinade for a beef steak or as a glaze for a baked ham it is ready to inspire all five senses.“

The Production:


Our Marmellata di Arancia contains a phenomenal fruit content of 95% of the very best, fresh and sun ripened Beldonna- and of organic Navel- -Oranges from Agrigento in Sicily. They are boiled in a little manufactory with a lot of love, mindfulness and with certified organic cane sugar and at the end, they are filled in marmalade glasses.

The Taste:


The taste of this orange marmalade is extraordinarily aromatic and interesting in many ways: Strong citrus notes meet fruity undertones and create an adventure of joy between sweet and sour every time you eat it.

JAM FIGS

Nonna Vita says:
  

„A heavenly pleasure, this fig jam! Just try it together with a yogurt or a vanilla ice. But also in combination with a Gorgonzola or a buffalo mozzarella its taste is just like a disclosure. With this fig jam, sometimes I refine muffins or a cake.“

The Production:


For our Confettura di Fichi We only use very ripe organic figs of the types Brogiotto bianco and Dottato bianco from the Sicilian Province of Castelvetrano. A short time after the harvest they are peeled by hand and prepared. This way they keep their taste and their typical flavour. During the production, we consciously avoid any additives like gelling agents or citrus acid. That is the reason this unique fig jam has a fruit content of 95%.


The Taste:
The mild sweet flavour of these perfectly ripened figs with its delicate and sugary berry notes is just like an “I love you” from the Mediterranean Sea. This seductive taste intensity is only reachable, when the figs are worked up during their exact level of ripeness. That means, that they haven’t been on a long transport route before.
